Wednesdays Unplugged – Baked Oatmeal Casserole

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Our daughter had a kitchen fire which caused enough damage to be annoying and require a new range and microwave, new counters, some new cabinets, fresh paint… not all bad!  Our grandson stayed overnight with us to get away from the fumes. We played Jenga, but I love what he did with the blocks afterwards even more… imagination at work!
RECIPE OF THE WEEK
I have had this recipe for baked oatmeal from Gene Smart tucked away for a long time… seemed like a good time to bake it last week after the snow dump. I used steel cut oats I had on hand… turns out they were stale so it affected the taste and I would use regular oatmeal next time but I think it was worth another try. Would be good for a breakfast buffet, don't overcook. Could add more liquid depending on the consistency you like, also use whatever fruit/nuts/chocolate chips you like. (I personally am not crazy about chocolate chips in my oatmeal, even though I love dark chocolate.)
BAKED OATMEAL CASSEROLE
  • 2 cups oats
    Baked oatmeal
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup berries (strawberries, blueberries…)
  • 1/2 cup dark chocolate chips (at least 60% cocoa)
  • 2 cups skim milk
  • 1 egg
  • 3 tablespoons margarine, melted
  • 1 tablespoon vanilla extract
  • 1 banana, sliced

Preheat oven to 375 degrees F.

In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the berries and half the chocolate chips. Pour into 10.5" x 7" baking dish.

Whisk together the milk, egg, melted butter and vanilla in the now empty bowl. Pour mixture on top of the oatmeal mixture and gently shake the baking dish to help the liquid go throughout the oats. Top with the remaining nuts, berries, chococate chips and sliced banana.

Bake 35 minutes until nicely golden brown.
