- 2 cups oats
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- 1 cup berries (strawberries, blueberries…)
- 1/2 cup dark chocolate chips (at least 60% cocoa)
- 2 cups skim milk
- 1 egg
- 3 tablespoons margarine, melted
- 1 tablespoon vanilla extract
- 1 banana, sliced
Preheat oven to 375 degrees F.
In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the berries and half the chocolate chips. Pour into 10.5" x 7" baking dish.
Whisk together the milk, egg, melted butter and vanilla in the now empty bowl. Pour mixture on top of the oatmeal mixture and gently shake the baking dish to help the liquid go throughout the oats. Top with the remaining nuts, berries, chococate chips and sliced banana.
Bake 35 minutes until nicely golden brown.
