Wednesdays Unplugged – Warm Toasted Marshmallow S’mores Bars

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

We spent a luxurious long weekend with dear friends on Bark Point, on the south shore of Lake Superior last weekend.

What made it so luxurious was the continuous stream of small treats… good conversation, reading overlooking the lakeshore, eating whole foods, swaying in the hammock, seeing and discussing new artwork, fabulous concert by BeauSoleil avec Michael Ducet, strolling in the north woods, exploring an old bookstore… and most of all, spending time with wonderful friends. 

RECIPE OF THE WEEK

It's hard to believe it is already July 4th this weekend, it feels like summer has barely arrived! Summer evenings make me think of roasting marshmallows and eating s'mores around a bonfire. If you are craving s'mores but don't have a bonfire handy, these bars are a good substitute… very rich, and best served when they are warm and gooey just like traditional s'mores. This recipe, from Betty Crocker, was a grand prize winner in 2006.

WARM TOASTED MARSHMALLOW S'MORES BARS

  • 1 pouch (1 lb 1.5 oz) Betty Crocker sugar cookie mixSmores
  • 1 cup graham cracker crumbs
  • 1 cup butter or margarine, melted
  • 3 cups milk chocolate chips (18 oz)
  • 4 1/2 cups miniature marshmallows

Heat oven to 375 degrees F. In a large bowl, stir together cookie mix and graham cracker crumbs. Stir in melted butter until soft dough forms. Press into ungreased 13×9-inch pan.

Bake 18-20minutes or until set. Immediately sprinkle chocolate chips over crust. Let stand 3-5 minutes or until chocolate chips begin to melt. Spread chocolate evenly over crust.

Set oven control to broil. Sprinkle marshmallows over melted chocolate. Broil with top 5-6 inches from heat 20-30 seconds or until marshmallows are toasted. (Watch closely, marshmallows will brown quickly.) Cool 10 minutes. Cut into bars and serve warm.
