Wednesdays Unplugged – Bistro Mac and Cheese with bacon

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

We are celebrating the first week of spring with rain turning to sleet last night, followed by snow and another 1-3 inches during the day today… oh, yes, not so surprising… we live in Minnesota! This is one of those days when I am very happy to have a home office!

RECIPE OF THE WEEK

Dhp-bday11 Last week was our son's birthday and he had fun coming up with what he wanted on the menu… including meatloaf, cheddar horseradish pub cheese and little smokeys. He brought beer from a local micro brewery, and found an interesting recipe for bistro mac and cheese… wanted it topped with bacon. For dessert he asked for tapioca pudding… I will share that delicious recipe next week. For the record, all three recent birthdays asked for wedge salad with french and blue cheese dressing… the homemade dressings are fabulous! 

BISTRO MAC and CHEESE with BACON

  • MacANDcheese-bistro 12 ounces bacon
  • 16 ounce package elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 1/2 cups 2% milk
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 cup (4 oz) shredded mozzarella cheese
  • 1 cup (4 oz) shredded cheddar cheese
  • 3 oz package cream cheese, softened
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/2 cup sour cream

Cook bacon until crisp. Place on paper towels to absorb grease. Crumble bacon when cool.

Cook macaroni according to package directions in Dutch oven. Meanwhile, melt butter in large saucepan, stir in flour until smooth. Gradually stir in milk and seasonings. Bring to a boil; cook and stir for 2 minutes or until thickened.

Reduce heat, add cheeses and stir until melted. Stir in sour cream. Drain macaroni, return to Dutch oven and pour cheese sauce over macaroni. Mix well and pour into flat casserole. Top with crumbled bacon.

Bake at 350 degrees F for 20-25 minutes or until bubbly.
