RECIPE OF THE WEEK
…must be why this recipe for Tuscan Soup appealed to me this week. The original recipe called for cubing whole potatoes, but I used quartered baby reds instead.
TUSCAN SOUP
- 48 ounces chicken broth
- 1 onion, chopped
- 1 pound hot Italian sausage
- 2 pounds baby red potatoes, quartered
- 5 ounce package spinach, chopped
- 1/3 cup evaporated milk
- Salt and pepper to taste
- Shredded Parmesan cheese
Crumble sausage into frying pan, add chopped onion and cook until meat is no longer pink.
Combine cooked meat, potatoes and broth in a large pot. Boil until potatoes are cooked. Add spinach and boil until lightly cooked. Remove from heat, stir in evaporated milk and season to taste. Garnish with shredded Parmesan cheese.
