NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

This has been a spring of remembering people who were special in our lives… my cousin’s husband and daughter, our effervescent friend Lin who spread joy wherever she went, and our marriage care group who were dear to us for over 30 years. Of the eight in the photo above, we said goodbye to the last one in the middle two couples this spring… only the two end couples are left, who share the exact same wedding anniversary. This year my John is recovering from knee surgery so instead of going out, the other couple brought dinner in… thank you, John and Beata! The good news is that my John is feeling better… hopefully by next year we will be celebrating our anniversaries in style!
RECIPE OF THE WEEK
I am not sure where I saw this recipe for corn dip, but it is so simple and easy I just had to try it. It was a winner… people kept digging in for more, surprised at how good it was.

QUICK AND EASY CORN DIP
- 2 cans Mexicorn
- 1 can original Ro-tel
- 1 cup sour cream
- 1 cup mayonnaise
- 8 green onions
- 2 cups shredded cheese
Mix, chill and serve with chips for dipping.
