NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
I had the privilege of spending time with our granddaughter at the Keith Haring exhibit currently at the Walker Art Center. I love how his images explode off whatever medium they are displayed. This exhibit is for everybody! In his own words, “You don’t have to know anything about art to appreciate it or to look at it. There aren’t any hidden secrets or things that you’re supposed to understand.”
RECIPE OF THE WEEK
I love peas, and when I saw this recipe for an old-fashioned pea salad at allrecipes.com I knew I had to try it. I copied the recipe as presented below, but I only found a 10 ounce package of frozen peas so adjusted other ingredients accordingly. Be sure to let it chill for at least an hour before serving, the flavors need time to blend.
OLD-FASHIONED PEA SALAD
- 16 ounce package frozen peas, thawed
- 1 onion, finely chopped
- 2 hard-cooked eggs, chopped
- 1/2 cup mayonnaise
- Salt and pepper to taste
Combine peas, onion, hard-cooked eggs and mayonnaise in a large bowl. Stir well to combine. Season with salt and pepper. Chill for one hour before serving.
