NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This was a hard week, saying goodbye my dear Aunt Fern. I love the photo above of her looking up at our grandson when we were there for a family reunion last summer. She would have been 90 years old on Christmas Eve. She and Ardell were devoted to each other, married for 67 years! He and I are standing by a painting by my mother that she gave them when she left the farm in North Dakota and moved to Minneapolis. We came back in time for A Christmas Carol at the Guthrie.
RECIPE OF THE WEEK
Being in North Dakota makes me wax nostalgic. My mother’s favorite dessert, which always makes me think of Christmas, is Apple Rum Dum… last shared here six years ago… when John was greeting people at the Guthrie for A Christmas Carol.
ALPHIE’S APPLE RUM DUM
CAKE
- 1 cup sugar
- 1/4 cup butter (1/2 stick)
- 1 egg
- 2 cups diced apples
- 1 cup flour
- 1 teaspoon soda
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped nuts, optional
Mix all ingredients in one bowl, in order. Bake in greased 9 x 9 inch pan in preheated 350 degree oven for 45-50 minutes. Top with hot rich butterscotch sauce, whipped cream and/or ice cream.
BUTTERSCOTCH SAUCE
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/2 cup heavy cream (a must)
Mix ingredients in a saucepan and bring to a boil. Serve hot over Apple Rum Dum.
