NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
I am waxing nostalgic this week before Valentine’s Day. We lost our dear friend, Nita, this week… who sent me a card with this week’s quote for my birthday the week they lost their dear grandson. It still sits on my desk. My mother passed on Valentine’s Day 11 years ago and she is still close to my heart.
RECIPE OF THE WEEK
This week’s recipe is in honor of my mother… her simple fudge recipe… sweets in honor of these sweet women in my world.
MOM’S FIVE-MINUTE FUDGE

- 2/3 cup evaporated milk
- 1 2/3 cup sugar
- 1/2 teaspoon salt
- 1 1/2 cups (16 medium) diced marshmallows
- 1 1/2 cups chocolate chips
- 1 teaspoon vanilla
- 1/2 cup chopped nuts
Mix undiluted evaporated milk, sugar and salt in sauce pan over low heat. Heat to boiling, then cook 5 minutes, stirring constantly. Remove from heat. Add marshmallows, chocolate chips, vanilla and nuts. Stir 1-2 minutes, until marshmallows melt. Pour into buttered 9-inch pan. Cool, cut into squares.
