Wednesdays Unplugged – Grandma Punky’s Refrigerator Pickles

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last weekend was Homecoming for our grandson… and our granddaughter’s rugby team came up from Winona State to play UMN women’s rugby team. It’s really fun watching those teams play each other… UMN is one of only a few teams that beats the Winona National Champions. We have watched Winona win in two other matches. This time they lost… but only by a 2-point conversion… it was an exciting game!

RECIPE OF THE WEEK

This is another recipe shared from cousin Nancy. I forget how much I like pickles. This recipe was courtesy of Untiedt’s Vegetable Farm of Waverly, Minnesota. The key ingredient is tarragon.

It reminded me of pickles that the audacious Swedish chef Magnus Nilsson served with meatballs… I may have to try that again! Interesting… he closed his world-famous restaurant in December 2019, just before Covid came on the scene. He said it just wasn’t fun anymore. Now he’s running an orchard in Sweden, learning a totally new profession.

GRANDMA PUNKY’S REFRIGERATOR PICKLES

  • 1 2/3 cups sugar
  • 1 cup tarragon vinegar
  • 1 tablespoon celery seed
  • 6-7 cups sliced cucumbers
  • 1 cup thinly sliced onion
  • fresh tarragon for garnish, if desired

In a medium mixing bow, mix sugar, vinegar and celery seed well until sugar is dissolved. Add cucumbers and onion. Refrigerate for at least 24 hours before serving. Garnish with fresh tarragon, if desired.
