NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This week was RE/MAX Results ValleyFair Takeover… on John’s birthday! It was wonderful getting out and doing ‘normal’ things again after a year of avoiding gathering with people because of the pandemic. This non-crowded day at the fair was a perfect way to ease back into getting out and having fun with family and friends.
RECIPE OF THE WEEK
I love summer pasta salads, and I love how you can make this one whatever you want it to be by using your favorites, or whatever you have on hand! Just use your favorite pasta, add you favorite veggies, favorite cheese, olives if you like, and mix it all together with this simple homemade dressing.
FAVORITE PASTA SALAD with homemade dressing
- 16 ounces uncooked pasta (bowtie or rotini or…)
- 8 ounces mozzarella balls, sliced in half (or other favorite cheese, cubed or shredded)
- 10 ounces grape tomatoes, sliced in half ( or cherry tomatoes quartered, or…)
- 12 ounces fresh broccoli and cauliflower (or other favorite vegetables, cut into small pieces)
- other favorite things, such as sliced olives, diced bell peppers, cucumbers, Parmesan cheese, etc
DRESSING
- 1 cup olive oil
- 1/2 cup white balsamic vinegar
- 1 tablespoon Italian seasoning
- 1 tablespoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon ground mustard
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Mix dressing and set aside. Cook pasta according to package directions. Cut up veggies and other favorites. Mix with cooked pasta and dressing. Chill and serve.
