NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
It is so fun to watch our grandsons each following their own passions… one singing with the Minnesota Boychoir and the other playing playing on the Hopkins 10th grade basketball team, both groups of boys learning and working together to create something outstanding.
RECIPE OF THE WEEK
I have loved fresh spinach since I was a child, but I know many do not share my opinion. This recipe can help change some people’s minds…
BAKED SPINACH PARMESAN
- 2 pounds fresh baby spinach
- 5 tablespoons butter
- 3 tablespoons olive oil
- 1 1/2 teaspoons minced garlic
- 1 tablespoon Italian seasoning
- 3/4 teaspoon salt
- 1 cup grated Parmesan cheese
Preheat over to 400 degrees F. In a small skillet, heat butter and oil over medium-low heat. Add spinach, garlic, Italian seasoning and salt. Cook 1-2 minutes until wilted.
Spread spinach in a greased 8 in square baking dish, and drizzle butter mixture in pan over the spinach. Sprinkle with cheese.
Bake, uncovered, until cheese is lightly browned, 10-15 minutes.
