Wednesdays Unplugged – Fruit Slush

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

This week has been a hot one, perfect time to gather at our pool! Smiles were not so big when our 14-year-old grandson broke his finger at football training! He gets his cast off the first day of 9th grade. In spite of all the road construction it feels like there is a quiet hush in the city. It seems like everyone must be away enjoying the last days of summer… or inside escaping the heat!

RECIPE OF THE WEEK

Sister-in-law Carol served this fruit slush dish when we were in North Dakota. It’s so refreshing, it seems appropriate to share now during our August heat wave. She served it with chilled ginger ale. I would think you could also serve it with chilled prosecco or champagne if desired.

FRUIT SLUSH

  • 1 cup water
  • 2 cups sugar
  • 3 mashed bananas
  • 1 cup pineapple juice
  • 1/4 cup lemon juice
  • 6 ounce can frozen orange juice
  • Cut up fruit of your choice – strawberries, blueberries, raspberries, blackberries, etc.
  • Chilled ginger ale

Boil 1 cup water and 2 cups sugar for 5 minutes. Cool, then add bananas, pineapple juice, lemon juice and frozen orange juice. Mix and freeze.

When serving put a spoonful of frozen fruit mixture in dish and add any desired fruit. Top with a splash of ginger ale.
