I changed my password to “incorrect” so whenever I forget it the computer will remind me with, “Your password is incorrect.” ~ unknown
NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
The week before Labor Day is a week when we traditionally have grandkids with us… including sleepovers and extra days of fun at the fair. We celebrated with corny quotes in the quote cup for family night.

PEACH CAPRESE SALAD
- Fresh peaches, sliced
- Fresh mozzarella, cut into strips
- Fresh basil, sliced into strips
- Fresh mint, chopped
- Olive oil
- White balsamic vinegar
Make individual servings by placing alternating peach and mozzarella slices on a salad plate to form a circle. Top with basil and mint, and sprinkle with olive oil and white balsamic vinegar.
