NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. We had a grandkid sleepover last weekend… went to see "Pete's Dragon" then had a good time at French Park running up and down a giant sledding hill and climbing the endless nets. Our grandson was so impressed with Simone Biles at the Olympics I had to choose a quote from her this week… she is amazing!
RECIPE OF THE WEEK
Colorado peaches are exceptional this year… I am perfectly happy just eating them plain, but this week's recipe is another delicious way to eat summer's bounty.
- 1 cup diced peaches (about 2 peaches)
- 1 cup diced tomatoes
- 1/2 cup diced red onions
- 1/4 cup chopped cilantro
- 1 jalapeno chile pepper, minced
- 1 tablespoon lemon juice
- 2 teaspoons sugar
Mix sugar and lemon juice, add to rest of ingredients in bowl and mix together well.
