NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
This past week was a big one… first week of school, first football game of the season for our 9-year-old grandson… leading Welcome Day festival for the last time for my husband and hanging out with two other grandkids.
RECIPE OF THE WEEK
I chose this week's recipe as a kid pleaser, but it also pleased adults including my husband and son who don't usually like spaghetti. You can tell this is an old recipe because it calls for 12 oz spaghetti. It now comes in 16 ounce packages and I used the whole package, also increasing other quantities slightly. Spaghetti sauce size was now 28 ounces, used one jar plus part of another… also added extra cheese. Thanks to my old college roommate for the recipe ages ago!
SPAGHETTI CASSEROLE
- 12 ounces spaghetti
- 2 eggs
- 1 cup milk
- 1 pound hamburger
- 32 ounce spaghetti sauce
- 8 ounces sliced pepperoni
- 8 ounces shredded mozarella cheese
Break spaghetti and cook according to package directions. Drain, and place in bottom of greased 9 x 13 pan. Beat together eggs and milk, pour on top of the spaghetti. Brown hamburger and season with salt and pepper; layer on top of the spaghetti. Top with spaghetti sauce, then pepperoni, then mozarella cheese. Bake covered for 45 minutes, then remove cover and bake another 15 minutes.
