Wednesdays Unplugged – Parmesan Potato-Crusted Halibut

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

We had a grandkid sleepover last Friday, followed by a day at the Renaissance Festival. Hadn't been there for awhile and the grandkids were a great age to pay their first visit. Fun getting swords and shields for the boys (same as we got our son when he was about their age)… and fairy wings, wand and a garland for our granddaughter (same as we got our daughter when she was little). A fun time was had by all.

RECIPE OF THE WEEK

I have been intending to try this recipe from 2007, Favorite Recipes The Costco Way for a long time and finally tried it over the holiday weekend. I wondered about using potato flakes, but it was delicious! Even my husband, who isn't a fish fan really liked it.

PARMESAN POTATO-CRUSTED HALIBUT

  • Halibut2 tablespoons grated Parmesan cheese
  • 4 tablespoons instant mashed potatoes
  • 1 teaspoon dried thyme
  • Salt and pepper
  • 2 tablespoons extra-virgin olive oil
  • 4 six-ounce portions halibut fillet

Preheat oven to 350 degrees F.

In a shallow bowl, combine Parmesan, potatoes, thyme plus salt and pepper to taste.

Heat a nonstick ovenproof saute pan over medium heat. Add 2 tablespoons olive oil.

Coat 1 side of the halibut with the potato mixture, pressing to adhere. Place fillets potato side down in the heated saute pan.

When the potato is golden brown (about 5 minutes), carefully turn the fillet over and place the pan in the oven. Cook until halibut is just done, about 5-7 minutes more.
