Wednesdays Unplugged – Broccoli & Grape Salad

Davinlaura1 It seems spring keeps trying to come but it keeps having setbacks. When I saw corn-on-the-cob in the grocery store last week I thought at least that would make it feel more like summer was on the horizon. I should have known better than to buy what isn’t in season…it wasn’t great. Oh, well…it helps us appreciate it more when we’re enjoying our great summer corn. At least the asparagus was good!

This week’s recipe shows my penchant for combining vegetables and fruit again. Everyone seems to have some version of broccoli salad…here’s mine.

RECIPE OF THE WEEK

Broccolisalad

BROCCOLI & GRAPE SALAD

2        big broccoli crowns, split into small ‘trees’ (as our kids call them)

1         bunch green onions, sliced

2-3     cups halved red grapes

2         packets microwave ready bacon, cooked crisp and crumbled

DRESSING

2/3    cup mayonnaise

1/2     cup sugar (scant)

1 1/2   Tbsp vinegar

Mix ingredients and toss with dressing (may not need all the dressing). Chill and serve.
