NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

2026 06 17 Jih Ardell Bdays

It is hard to believe my Uncle Ardell who we saw when we were in ND is celebrating his 96th birthday this weekend! We celebrated my husband John’s 78th birthday at our last family night… all our grandkids were there. Both John and Ardell are 100% Norwegian… it feels appropriate to share a Norwegian Proverb about how age brings a world of wisdom and the ‘baggage’ of life with it.

RECIPE OF THE WEEK

John asked for meat loaf for his birthday dinner. I decided to try something new… a recipe from the Mindekirken cookbook of the Norwegian Lutheran Memorial Church of Minneapolis.

WORLD’S GREATEST MEATLOAF – from the Mindekirken Cookbook Committee

  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried leaf basil
  • 1/2 teaspoon dried leaf thyme
  • 1/4 cup ketchup
  • 2 teaspoons prepared mustard
  • 1 1/2 cup soft bread crumbs
  • 2 beef bouillon cubes dissolved in 1 cup boiling water
  • 1/2 cup celery, chopped
  • 1/2 cup onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 2 pounds ground chuck

Preheat oven to 375 degrees F. Beat egg in bow. Add salt, pepper, basil, thyme, ketchup, mustard, crumbs and bouillon, mixing well. Stir in celery, onion and cheese. Add ground chuck and mix thoroughly. Pat into a loaf in a 9x5x3 inch loaf pan. Bake at 375 degrees for 60-70 minutes.
