Wednesdays Unplugged – Magic Cookie Bars

The journey has always been about laughing together, loving each other, seeking adventure, believing in our dreams and making a difference… but sometimes we forget.

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our winter started out so mild, even the ice rink where our grandson works was closed… not now, we are on a cold string just perfect for the Minneapolis Institute of Ice where we stopped last weekend. The courtyard behind the museum is filled with ice sculptures inspired by works of art in the museum… it amazes me how they can do that!

RECIPE OF THE WEEK

It is Valentine’s Day week so I thought I should share something sweet. I found this recipe at allrecipes.com… similar to my mother’s Hello Dolly bars from 50 years ago. I like this one much better… softer crust and missing the top layer of white chocolate chips… they already have enough chocolate! I have been finding myself craving them… they are that good, and easy to make.

MAGIC COOKIE BARS

  • 1/2 cup butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 1 cup chopped walnuts
  • 1 cup semisweet chocolate chips
  • 1 1/3 cups flaked coconut
  • 14-ounce can sweetened condensed milk

Preheat oven to 350 degrees F.

Pour melted butter into a 9 x 13 inch pan. Sprinkle graham cracker crumbs evenly over melted butter, followed by chopped nuts, then chocolate chips and coconut. Pour sweetened condensed milk over all.

Bake in preheated oven for 25 minutes or until lightly browned to top. Cool for 15 minutes before cutting into finger-length bars.
