NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We got see John’s ‘twin’ cousin this past week when they were here from visiting from New Mexico. He is a great watercolor artist. But my big art news this week is the wonderful portraits our granddaughter did of us… John got his for his birthday in June, and I got mine for my birthday today! Love them and her, it’s hard to believe she is now a talented teenager.
RECIPE OF THE WEEK
Love this simple avocado and corn dish… call it a salad, call it a dip, it is delicious whether you eat it with chips or pita bread or by itself.
QUICK AVOCADO AND CORN SALAD/DIP
- 1 avocado – peeled, pitted and diced
- 1 cup whole kernel corn
- 1/4 cup chopped cilantro
- 1/2 lemon, juiced
- Salt and ground black pepper to taste
Mix avocado, corn, cilantro, lemon juice, salt and pepper together in a bowl. Let sit 5 minutes before serving.
