Wednesdays Unplugged – The Very Best Fish Recipe Ever

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

The ladies from our Marriage Care group that started about 25 years ago met for brunch a few weeks ago… looking back on over a year of not getting together and celebrating that we are all now Covid-19 vaccinated!

RECIPE OF THE WEEK

I was hungry for a fabulous fish recipe and found this week’s recipe online at Living Well Spending Less. The recipe said it works with almost any kind of fish, including halibut, tilapia, flounder, mahi mahi, salmon or cod. I can extend that list to catfish, which is what I used because it was on sale. It really was delicious and also quick!

THE VERY BEST FISH RECIPE EVER

  • 3/4 cup shredded Parmesan cheese
  • 1/3 cup butter, softened (plus more for greasing pan)
  • 1/4 cup mayonnaise
  • 3 tablespoons fresh lemon juice
  • 1/4 cup chopped green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill (or 2 teaspoons dried dill)
  • 2 dashes Tabasco sauce
  • 2 pounds skinless fish

Pre-heat the oven broiler. Grease 9 x 13 inch baking dish with thin coat of butter.

Mix together Parmesan cheese, butter, mayo, lemon juice, green onion, salt, pepper, dill and Tabasco in a small bowl until well blended.

Arrange fish in a single layer in baking dish.

Broil fish for 8 minutes on low or until it flakes with a fork.

Remove from oven and carefully spread Parmesan mixture over the top. Broil an additional 2 minutes, or until bubbly and lightly browned.
