Wednesdays Unplugged – Dill Pickle Dip

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

2026 08 02 Germany Ice Cream

Our son and DIL were in Germany this week… to witness the note change in Halberstadt on a musical piece by John Cage. designed to last until 2640… they even noted in on Kare11 news… link… meanwhile, we went with their children to Powderhorn Park Art Fair last weekend, love the plate found there that sounds just like our granddaughter, “I yearn for crusty bread”… we also loved having lunch with our dear friend Ron, visiting from California and just starting to learn to live without his wife of 56 years after she died this year, our friends since 1976…

RECIPE OF THE WEEK

We had brunch at Earl Giles Restaurant and Distillery last Sunday, great setting and great food. We were surprised by a dill pickle dip and house made chips… fabulous, so I had to try making it for ourselves thanks to a recipe from flavorfuleats.com.

Dill Pickle Dip

DILL PICKLE DIP

  • 1 cup sour cream
  • 1/2 cup mayo
  • 1 cup chopped pickles, approximately 5 spears
  • 2 tablespoons pickle juice
  • 1 tablespoon fresh dill or 1 teaspoon dried
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground black pepper

Add all ingredients to a mixing bowl and stir to combine. Refrigerate for about an hour to let let the flavors mingle.

Serve with: potato chips, tortilla chips, carrot and celery sticks, crackers, pita chips
