NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

John finally made it through his second knee replacement… ended up in rehab facility after he had internal bleeding in his knee. It looks like all is well now… home before July 4th… then to Vino in the Valley the day after the 4th! The Renoir puzzle I did looks deceptively simple… but with intricately cut squiggly pieces that are far from ‘standard’!
RECIPE OF THE WEEK
In my mind, summer is tomato season, and this recipe inspired by spendwithpennies.com struck my fancy this week… quick and easy… and easy to make additions as you wish.

TOMATO CUCUMBER SALAD
- 1 English cucumber, sliced and slices halved
- 2-3 whole tomatoes, chopped or 12 ounce package on-the-vine red cherry tomatoes, halved
- 1/2 red onion, thinly sliced using mandoline
- 2+ tablespoons olive oil
- 1 tablespoon white balsamic vinegar
- 1 tablespoon herbs (fresh or dried, basil, parsley, dill)
- Salt and pepper to taste
Combine all ingredients in a bowl and toss well.
Refrigerate at least 20 minutes before serving.
