NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

The past few weeks since the I.C.E. invasion have been hard, even our church was visited by them. Life goes on and we attended the Minneapolis Children’s Theater production of Go, Dog, Go! this week. It was fabulous fun, and a good break from everything else and before the deep freeze descends at the end of the week.
RECIPE OF THE WEEK
This warm, creamy spinach parmesan dip is a perfect appetizer for gatherings (think SuperBowl) or just cozying up for a night in.

HOT SPINACH PARMESAN DIP
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 10 oz frozen spinach, thawed and patted dry
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preheat oven to 375 degrees F.
In a large bowl, combine spinach, cream cheese, sour cream Parmesan cheese, minced garlic, red pepper flakes, salt, black pepper and half of the mozzarella. Mix until smooth and well combined.
Transfer the mixture to an oven-safe dish. Spread it evenly and sprinkle the remaining mozzarella on top.
Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbly.
Remove from the oven and let it cool slightly. Serve warm with bread, chips, crackers or vegetable sticks.
