NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our daughter-in-law has been a speed puzzler for a long time, and last weekend I went to see her team in action at a speed puzzling championship. It was impressive! I don’t know how many teams were there, but our DIL’s team was #41… they completed the 1000-piece puzzle in just under 1 1/2 hours! This week was also a time of amazing Northern Lights. My cousin in ND took the photo above of the church where I grew up.
RECIPE OF THE WEEK
I felt like Mexican this week and wanted an appetizer. This queso dip I found online was a hit!

SLOW COOKER QUESO DIP
- 16 ounces Velveeta cheese, cubed
- 2 cans ROTEL diced tomatoes with green chiles
- 1 pound ground beef
- 1 packet (or 3 tablespoons) taco seasoning
- Brown the ground beef over medium heat until meat is cooked through; drain.
- Add taco seasoning and water according to package directions. Cook until all liquid has been evaporated and remove from heat.
- Add the meat, cheese, and canned diced tomatoes with green chiles to the slow cooker.
- Stir well and cook on medium until cheese is completely melted (about 1 1/2 hours)
- Reduce heat to warm and serve with tortilla chips
