Wednesdays Unplugged – Summer Fruit Salad

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

I consider the weeks before and after the 4th holiday weeks… time to enjoy what feeds my soul. For me that means experiencing the arts… and relaxing in nature.

RECIPE OF THE WEEK

I remember a fellow worker asking me years ago whether I was a fruit or vegetable person. I had never thought of that before, but had to respond that I was a fruit person. Summer to me is bursting with delicious fruit, as is this delicious summer fruit salad recipe.

SUMMER FRUIT SALAD

  • 2 cups sliced strawberries
  • 2 cups blueberries
  • 2 cups grapes (halved if large)
  • 3 kiwis, peeled and sliced or chopped
  • 2 peaches, peeled and sliced or chopped
  • 2 bananas, sliced and added just before serving
  • 2 oranges, segmented and cut into chunks

DRESSING

  • 2 tablespoons honey
  • 1 tablespoon orange juice
  • 1 tablespoon lime juice

Mix the dressing in a small bowl, set aside.

Combine all the fruit in a large bowl, pour the dressing on top and gently mix.

Refrigerate at least 1 hour before serving to allow the flavors to meld. It will keep up to 3 days in the refrigerator.
