Wednesdays Unplugged – Best Buttered Egg Noodles

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last week we celebrated our 54th anniversary with dear friends who also celebrated their 54th anniversary on the same day… 108 years of combined happiness that does not depend on what happens! We had a wonderful meal in a beautiful setting at Restoration Hardware Restaurant, which we all agreed was the best anniversary dinner we had in a long time! Everything was delicious, but it was the delicious shaved artichokes brought by our server that surprised us the most… would definitely order next time!

RECIPE OF THE WEEK

I looked for a copycat artichoke recipe in vain… so am sharing a simple but delicious recipe for buttered egg noodles submitted to food.com by David Ball, who calls them the best ever! The recipe is for 8 ounces of noodles, to serve 4… I doubled the recipe for our Wednesday night crew and it all disappeared.

BEST BUTTERED EGG NOODLES

  • 2 chicken bouillon cubes
  • 1 1/2 cups water
  • 1/2 cup high quality butter
  • 8 ounces egg noodles

Bring water, 2 bouillon cubes and 1/2 stick of butter (1/4 cup) to a boil over medium high heat.

Add egg noodles.

Cook until noodles are desired texture, about 6-8 minutes. Add remaining 1/2 stick of butter during last minute of cooking.
