NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

We celebrated our daughter-in-law’s birthday this week. We call her our puzzle maven so it seemed appropriate that her birthday card was a puzzle!
RECIPE OF THE WEEK
The birthday celebrant gets to choose the menu, and Laura chose grilled cheese and tomato soup. I picked up the soup from Turtle Bread and the grilled cheese recipe from NatashasKitchen.com. It’s the blend of three cheeses on thick Texas toast that makes this recipe stand out.

THREE CHEESE GRILLED CHEESE
- Texas toast, 2 slices for each sandwich
- Softened unsalted butter
- 3 slices cheese for each sandwich
- Cheddar
- Gouda
- Havarti
Stack cheese between two slices of bread, then butter the outer sides. Cook on griddle over medium-low heat to toast the bread slowly and allow cheese to melt and bread to turn a rich golden brown, flipping once. Total cooking time should be about 5-6 minutes. Cut in half diagonally to serve.
