NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Our granddaughter is a violist, and when I learned that one of the best violists in the world, Tabea Zimmerman from Germany, was coming for the season opening concert of St. Paul Chamber Orchestra I knew we had to go. She reminded us that this group of musicians is exceptional, we are lucky to have them right here in the Twin Cities. We had front row seats… beautiful concert… amazing to see her playing up close!
RECIPE OF THE WEEK
Peaches are my favorite fruit, and they have been exceptional this year. This recipe from delish.com tastes very fresh. I didn’t have any shallots so I added 1 teaspoon onion powder to the dressing.
BLUEBERRY PEACH CUCMBER SALAD
- 1/4 cup white balsamic vinegar
- 1 teaspoon finely grated lemon zest
- 1/2 teaspoon Dijon mustard
- Kosher salt
- 1/2 cup extra-virgin olive oil
- 1/4 cup finely chopped shallots (or 1 teaspoon onion powder)
- 2 medium yellow peaches, halved lengthwise, cut into 1/4″ thick slices
- 2 baby cucumbers, sliced into 1/4″ thick rounds
- 1 cup fresh blueberries
- 1 tablespoon thinly sliced fresh basil
- 1/3 cup crumbled feta cheese
In a large bowl, whisk vinegar, lemon zest, mustard, and 1/2 teaspoon Kosher salt. While whisking, slowly pour in oil until smooth and emulsified. Add shallots and whisk to combine.
Add peaches, cucumber, blueberries and basil, and toss to combine. Top with feta.
