NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
It was Maddie’s high school graduation last weekend, and family gathered to celebrate… everyone was excited to meet August, who drove up from Iowa. We also got to meet Kennedy’s boyfriend for the first time. It was a momentous occasion!
RECIPE OF THE WEEK
After several weeks of missed family nights due to end of the school year festivities, we finally had a chance to grill while Maddie was at the theater awards presentations… she was named “The Tinkerer”… there wasn’t a part of staging that she didn’t touch! The recipe for chicken thighs came from Lunds & Byerlys… I highly recommend it.
GRILLED HONEY SRIRACHA CHICKEN THIGHS
- 6 tablespoons honey
- 4 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons sriracha
- 2 pound boneless chicken thighs
- Green onions, chopped, for topping
- Limes, for squeezing
In a small bowl combine honey, olive oil, soy sauce, vinegar and sriracha. Stir well to combine.
Place chicken thighs in a container with a lid and pour honey sriracha marinade over the chicken. Cover and refrigerate for at least 30 minutes or overnight.
Heat the grill to medium-high heat.
Place chicken thighs on grill and grill 8-10 minutes on each side or until meat thermometer reads 180 degrees.
Serve drizzled with sriracha, green onions and a squeeze of lime.
