Wednesdays Unplugged – Delicious Healthy Baked Salmon

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

After dinner we usually play a game… this time chosen by our grandkids… Telestrations. You are witnessing the lull before the hilarity… when almost everyone is concentrating. Maddie just came back from a band trip to Memphis and Nashville and showed off her new earrings.

RECIPE OF THE WEEK

I was hungry for salmon and got a wonderful slab of fresh Atlantic salmon, farm raised from Norway. I was impressed with how soft it was both in color and texture. It was also delicious! This recipe from lecremedelacrumb.com said it was the very best… and it did not disappoint. I got a slab at Costco, which is never small… doubled the recipe, which turned out perfectly.

DELICIOUS HEALTHY BAKED SALMON

  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian herb seasoning blend
  • 1 medium lemon

Preheat oven to 400 degrees F and grease a large rimmed baking pan. Arrange salmon fillets on the baking sheet and season generously with salt and pepper.

Stir together olive oil, garlic, herbs, and juice of 1/2 lemon. Spoon over salmon fillets being sure to rub all over the tops and side of the salmon so there are no dry spots. Thinly slice remaining half lemon and top salmon pieces with lemon slices if desired.

Bake for 12-15 minutes until salmon is opaque and flaky when pulled apart with a fork.

Garnish with fresh thyme or parsley if desired and serve.
