NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We started the Advent season at church last Sunday morning with Bach’s Cantata 61, which he wrote for the first Sunday in Advent in 1714… based on a tune dating back to the 4th century! To start the holiday season, our son’s family cut their tree and we went to our first concert of the season on Sunday… by The Singers. Choirs and singing are abundant throughout the holiday season.
RECIPE OF THE WEEK
After heavy Thanksgiving week, I decided to make Ultimate Grilled Cheese this week. The key to these delicious sandwiches is the blend of cheeses… Cheddar, Havarti, and Gouda… just the right blend for flavor and meltiness.
ULTIMATE GRILLED CHEESE
- 2 slices high quality bread for each sandwich
- Unsalted butter, softened
- One slice each cheese for each sandwich
- Medium cheddar
- Havarti
- Gouda
Spread butter on one side of each slice of bread.
Set a skillet or griddle over medium/low heat with butter side down.
Place two slices in the skillet for each sandwich, and stack one slice of each of the cheeses on one piece of toast: Cheddar, Havarti and Gouda. Once the breads are golden brown, close the sandwich with the crisp sides on the outside and continue to cook and flip until the bread is golden brown and the cheese is fully melted, about 5-6 minutes total cooking time.
Remove the sandwich to a plate and cut diagonally to serve.
Repeat for all the sandwiches.
