NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
This was John’s birthday week, celebrating with some of his favorites… frosted cinnamon roll for breakfast, Rocky Rococo pizza for lunch, and DQ cake for family night. One of our grandsons wasn’t here this week… he is in Japan! This week’s quote is from one of John’s favorite movies.
RECIPE OF THE WEEK
I love egg salad, and this recipe from Southern Living has a little twist. It has radishes and dill, but doesn’t have much mayonnaise… it lets the eggs be the star. The cheese on the tray below is a favorite at our house… Prairie Breeze, made by Milton Farms in Iowa.
PICNIC EGG SALAD
- 6 hard-cooked eggs, peeled and chopped
- 3 tablespoons mayonnaise
- 2 tablespoons minced radish
- 1 tablespoon minced fresh dill
- 1 teaspoon minced scallion
- 1/2 teaspoon kosher salt
- 18 thin baguette slices
Stir together eggs, mayonnaise, radish, dill, scallion, and salt in a medium bowl. Spread 1 heaping tablespoon egg salad on each baguette slice.
