Wednesdays Unplugged – Cucumber Salad

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

The Sherlock Holmes exhibit at the Minnesota History Center is soon coming to an end, and I made another visit with our son’s family. Our son marveled at how the exhibit itself was made, including the brick wall at Baker Street. Back here Wednesday night our goofy grandson saw a headdress in a phone tripod. We are supposed to get more snow this weekend, but the sun and warmer days this past week have had a big impact and it is encouraging to see the snow piles receding. It is amazing what impact the sun can have on a space, both inside and out… both physically and mentally brightening it!

REIPCE OF THE WEEK

This bright, crunchy green salad feels like spring! I just saw another version with orzo, which I think would also make a great addition… but this one based on a recipe from thecozyapron.com pairs wonderfully with almost any main dish. Use proportions to taste… and what you have on hand!

CUCUMBER SALAD

  • 6 Persian cucumbers, sliced and cut in half
  • 1 cup cherry tomatoes, cut in half
  • 1 cup garbanzo beans, rinsed
  • Half of small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons fresh lemon juice
  • 1/4 cup olive oil
  • Sea salt, to taste

In a small bowl or measuring cup mix olive oil and fresh lemon juice, add sea salt to taste and set aside for the dressing.

Mix the rest of ingredients in a large bowl. Add dressing, gently tossing to combine.

Garnish with extra herbs and feta cheese if desired, and serve.
