NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
I was at a women’s retreat along the St. Croix River last weekend… love the frozen architecture of the icicles framing the landscape. Meanwhile, our granddaughter was making homemade buns… I hope I get to taste some next time!
RECIPE OF THE WEEK
It seems like fruit salads at this time of year get so boring. This winter fruit salad from Sara at Dinner at the Zoo uses a great combination of winter fruit, and the lemon-honey-poppy seed dressing is light and refreshing.
WINTER FRUIT SALAD with honey poppy seed dressing
- 3 cups cubed pineapple
- 3 peeled, quartered, and slice kiwi
- 3 segmented mandarin oranges or clementines
- 1/2 cup pomegranate arils
- 3 tablespoons lemon or lime juice
- 3 tablespoons honey
- 1 tablespoon poppy seed
Mix the fruit in a large bowl, adjusting amounts as needed to get the balance you want. Whisk together the lemon juice, honey and poppy seeds in small bowl and pour over the fruit. Gently toss to coat.
