NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

RECIPE OF THE WEEK
I have loved spinach since I was a child, and when I saw this recipe that the contributor said his Grandma used to make I had to try it. A purist at heart, my favorite spinach is simply sauteed with butter and salt and pepper… but this is an interesting alternative.

OLD-FASHIONED SPINACH SOUFFLE BAKE
- 2 cups cottage cheese
- 3 eggs, beaten
- 3 10-ounce packages chopped frozen spinach, thawed and squeezed dry
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 1/2 cups shredded Cheddar cheese, divided
Preheat oven to 350 degrees F. Grease sides and bottom of an 8-inch square baking dish.
In a large bowl, beat the eggs then add the cottage cheese and mix together. Stir in spinach, salt, nutmeg, and 1 1/4 cups of shredded Cheddar cheese. Mix until well blended. Spread Evenly into prepared pan.
