NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We had our holiday dinner with the Breakfast Club this week, just as snow and bitter cold moved in. Many schools were closed, and even our RE/MAX Results offices closed on Thursday-Friday due to inclement weather. I don’t know how many inches we got (Weather Service said 8.1 inches at the airport on Wednesday), but you can get an indication from the snow depth on the table on our patio. We are still officially in a winter storm, and temperatures are below zero. There is no question we are having a White Christmas this year!!!
Holiday Salad with raspberries, kiwi and poppy seed dressing
recipe from Betty Crocker Holiday 2003
Dressing
- 1/2 cup mayonnaise or salad dressing
- 1/3 cup sugar
- 1/4 cup whole milk
- 1 tablespoon poppy seed
- 2 tablespoons white vinegar
Mix all ingredients in small bowl with wire whisk, refrigerate until serving.
Salad
- 2 bags hearts of romaine salad mix
- 1 red onion – thinly sliced
- 2 cups fresh raspberries
- 4 kiwifruit – peeled, sliced and cut in half
Toss romaine and red onion with some of the dressing to coat. Top with fruit and drizzle with additional dressing. Toss lightly and serve immediately.
