NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
After many years of going to football and basketball games for our grandson, it is so much fun watching our 13-year-old granddaughter play tennis! The weather has been perfect, and she has some wins in both singles and doubles matches… way to go, Sina!
RECIPE OF THE WEEK
This week’s recipe is a tried and true favorite from Carolyn Hensrud.
TOOTSIE ROLL BARS
BASE
- 1 cup brown sugar
- 1/2 cup margarine or butter
- 1 egg
- 1 1/4 cup flour
- 1 1/2 cups quick oatmeal
- 1/2 teaspoon soda
TOPPING
- 1 can sweetened condensed milk
- 2 tablespoons butter
- 6 ounces chocolate chips
- 1 teaspoon vanilla
Mix together ingredients for base and pat half of the mixture into a 9 x 13 pan.
Melt one can sweetened condensed milk and 2 tablespoons butter. Add 6 ounces chocolate chips and 1 teaspoon vanilla. Pour in pan and cover with the rest of the base mix.
Bake at 348 degrees for 12 minutes. Shut off oven and leave in 12-14 minutes more.
