Wednesdays Unplugged – Dill Cucumber Bites

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

I saw the painting in the middle above in a very cool modern house I showed by a city lake this weekend. John’s eyes lit up when I showed it to him… think we will have to seek out the artist! And… the little frogs on each side in the photo above were on the front screen door of a new listing of mine. I was especially taken by the strong, bright green one… seems a reflection of the strong colors in the painting. They bring me joy… love the original painting even more with a bigger sky, makes me think of the North Dakota landscape where I grew up.

RECIPE OF THE WEEK

Our son brought over some cucumbers from their neighbor and these bite-size appetizers were a perfect way to use them. Filled with flavor, simple to make, simple to eat… just perfect. Make the topping (this recipe makes a lot), then use the cucumbers and tomatoes you have… even spread it out over several days… the cream cheese topping is also good with crackers.

DILL CUCUMBER BITES

  • Cucumbers
  • Grape tomatoes
  • 8 ounce block cream cheese, room temperature
  • Small container plain Greek yogurt
  • 3 tablespoons (one small blister pack) fresh dill, minced
  • 1 tablespoon dry Ranch dressing mix

Slice cucumbers into rounds about 1/4 to 1/2 inch thick. Slice grape tomatoes in half. Set aside.

Mix cream cheese, yogurt, dill and dry dressing mix until smooth.

Top each cucumber round with a dab of the cream cheese mixture, topped with grape tomato half.
