Wednesdays Unplugged – Cowboy Caviar

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our dear friends Mike & Jane showed us how they continue to play after 50 years of marriage when we went up to their home on the south shore of Lake Superior last weekend to help celebrate. It was especially fun because we also got to see their kids and grandkids. We moved in across the street from them when we moved to Eden Prairie in 1987 and our kids were similar ages… now their grandkids are about the ages of our children when we met!

RECIPE OF THE WEEK

It was a treat to be invited by clients for Happy Hour and a look at how they have made their charming Linden Hills home their own a few weeks ago. We were enjoying ourselves so much I completely forgot to take any photos, but Coco was kind enough to send me a photo and copy of the recipe of the delicious cowboy caviar she served. There are numerous versions scattered over the web, this one is from NatashasKitchen.com. The original recipe called for 1 medium diced onion, which she omitted… that gives it a bite our family also prefers omitted, so left it out of the recipe below… feel free to add it!

COWBOY CAVIAR

  • 6 Roma tomatoes, diced
  • 1 yellow bell pepper, seeded and diced
  • 2 jalapeno peppers, seeded and finely diced
  • 1 large avocado, peeled, pitted and diced
  • 15 ounce can corn, drained
  • 15 ounce can black beans, well rinsed and drained
  • 1/2 bunch of cilantro, about 1/2 cup chopped
  • 3-5 tablespoons lime juice
  • 1/2 cup light Italian dressing
  • 4 medium garlic cloves, pressed
  • 1 teaspoon sea salt, or to taste

In a large mixing bowl, combine tomatoes, bell pepper, jalapeno, avocado, corn, black beans and cilantro.

Stir together lime juice, Italian dressing, garlic and salt.

Mix everything together and serve with tortilla chips.
