We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

RECIPE OF THE WEEK
I am always on the lookout for sensational sauces for slathering or dipping, and with holiday grilling on many agendas this coming holiday weekend I am sharing an awesome one from CuisineAtHome.com that we made this week. We brushed in on pork tenderloins, but it would also be good to brush to on fish or poultry in the last minutes of grilling, then serving it as a topping or dip accompaniment.
RASPBERRY-BALSAMIC GRILLING SAUCE
- 1/2 cup minced shallots
- 1 tablespoon olive oil
- 1 cup tomato sauce
- 1 cup seedless raspberry jam
- 1/4 cup each balsamic vinegar
- 1/4 cup red wine vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- Salt, black pepper, red pepper flakes to taste
Sweat shallots in oil in a saucepan over medium heat until softened, 2-3 minutes.
Whisk in tomato sauce, jam, balsamic and red wine vinegars, Dijon and Worcestershire.
Simmer sauce 10 minutes, then season with salt, black pepper and pepper flakes.
