Wednesdays Unplugged – Grilled Caesar Salad

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our grandson had his last high school basketball games this week… played in students vs faculty game at school, then in community league tournament over the weekend… great games… so fun to watch him play, he is quite the showman! His sister came up from Winona to watch!

RECIPE OF THE WEEK

It was our son’s birthday dinner this week and he picked out some great recipes, including this one for grilled caesar salad from thespruceeats.com. Since it is still officially winter, we used a grill pan, but it was really good… I wouldn’t have thought of grilling lettuce!

GRILLED CAESAR SALAD

GRILLED CAESAR SALAD

DRESSING

  • 1 clove garlic, finely minced
  • 1 tablespoon olive oil
  • 2 tablespoons mayonnaise
  • 1 Tablespoon Worcestershire sauce
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Freshly ground pepper to taste

FOR THE LETTUCE

  • 2 hearts romaine lettuce, cut in half lengthwise
  • 1 tablespoon olive oil
  • Salt to taste
  • Freshy ground pepper to taste

FOR THE CROUTONS

  • 3 thick slices crusty bread
  • 1 tablespoon olive oil

Preheat grill or grill pan to medium-high heat.

Whisk the dressing ingredients together to make the dressing.

Brush the romaine hearts with oil and season with salt and pepper. Place the lettuce, cut side down, on the grill and cook until lightly marked, about 4-5 minutes.

Brush the bread slices with olive oil and grill  for about 5 minutes, then cut it into cubes.
