NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We had a big snow dump over the weekend, one of those snowstorms where the snow is heavy with water and sticks to the branches and brings out the contrast between the dark branches and heavy white snow. Kind of like the play they are doing at Children’s Theatre Company about two contrasting families. Something Happened in Our Town encourages discussions about how we can come together as a community and find our way to better understanding each other. It was especially fun because one of the young actors is the neighbor of our son’s family… and he has come to several productions with our family.
RECIPE OF THE WEEK
I came upon this recipe in AllRecipes for crust-less pizza. I thought it sounded interesting and a great gluten free pizza alternative. It was that, plus it was delicious… everyone liked it!
CHEESE CRUST SKILLET PIZZA
- 1 1/2 cups shredded mozzarella cheese
- 5 cherry tomatoes, thinly sliced
- 2 tablespoons fresh basil leaves, cut into thin strips
- 4 small fresh mozzarella balls, thinly sliced
Heat a 10-inch non-stick skillet over medium-high heat. Sprinkle shredded mozzarella cheese evenly into the hot skillet; cook until cheese is melted, 2-3 minutes.
Arrange tomato slices, basil leaves and fresh mozzarella slices on the melted cheese, leaving space for a ‘crust’ to form; cook until the top is bubbling and the edges are browned, 2-3 minutes.
Remove skillet from heat and loosen pizza with a spatula. Gently slide pizza onto a cutting board; cool for 1 minute before slicing.
