Wednesdays Unplugged – Baked Scrambled Eggs

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Our grandson got his Letterman’s Jacket this week… and our daughter-in-law dug hers out to bring as well. I loved seeing them hanging by our front door… how you can see the 50-year difference, and also how they lettered in different things!

RECIPE OF THE WEEK

We had pancakes this week, and I had to get creative to also have eggs. These oven scrambled eggs are super basic, super simple and super good. I was supposed to mix them up during the cook time to make them be more ‘scrambled’ but I got distracted with other things and forgot… they were still simply delicious, just more like smooth quiche eggs.

BAKED SCRAMBLED EGGS

  • 1/4 cup butter, melted
  • 12 eggs
  • 1 teaspoon salt
  • 1 1/4 cup milk

Preheat oven to 350 degrees F. Melt butter in the oven in a glass 9 x 13 inch baking dish. In a large bowl, whisk together eggs and salt until well blended. Gradually whisk in milk. Pour egg mixture into the baking dish.

Bake uncovered for 10 minutes, then stir, and bake an additional 10-15 minutes, or until eggs are set but still glisteny-moist. Serve immediately.
