Wednesdays Unplugged – M&Ms Chocolate Chip Cookie Bars

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

Last week we rented a big cabin near Devil’s Lake in Baraboo, WI for our whole family to spend some extended time together… first time since COVID. We celebrated our 50th anniversary by bringing everyone to Frank Lloyd Wright’s home and studio at Taliesin. As everyone was talking about how good it was to be together as we were leaving, our grandson said “it was the ‘Wright’ thing to do!”

RECIPE OF THE WEEK

The treats that went first at the cabin last week were the M&Ms cookies, so I looked for an M&Ms bar cookie recipe this week… found this one at shugarsweets.com… loaded with chocolately goodness! I think these would make great sundaes.

M&Ms CHOCOLATE CHIP COOKIE BARS

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 teaspoon kosher salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups M&Ms candies

Preheat oven to 350 degrees F. Line a 13 x 9 baking pan with parchment paper, set aside.

In a large bowl, combine butter and sugars until well blended. Add eggs, egg yolk and vanilla. Mix well.

Mix together flour, baking soda, cornstarch, and kosher salt. Add to other ingredients and mix just until combined.

Fold in chocolate chips and M&Ms.

Press cookie dough into baking pan and bake 35 minutes until lightly browned. Remove, cool completely, and watch them disappear.
