Wednesdays Unplugged – Crunchy Mandarin Chicken Salad

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. Every August for about the last 20 years Nancy, Beata and I have gotten together for lunch to celebrate our August birthdays. We usually go to the fabulous outdoor patio at W.A. Frost but it was closed last week due to a Covid outbreak in the serving staff. So we went to La Grolla instead… a different feel, but very nice, intimate, and molto bene!

RECIPE OF THE WEEK

This recipe from delish is a takeoff on a simple salad I have been making for years, with the great addition of rotisserie chicken, mandarin oranges and homemade dressing! I used a bag of cole slaw greens and added some chopped iceberg lettuce.

CRUNCHY MANDARIN CHICKEN SALAD

FOR THE SALAD

  • 3 cups finely chopped romaine or iceberg lettuce
  • 2 cups shredded red cabbage
  • 2 cups shredded chicken
  • 1/2 cup mandarin oranges, drained
  • 1 instant ramen packet, crushed (flavor packet discarded)
  • 1/2 cup shredded carrot
  • 1/3 cup sliced green onions
  • 1/4 cup sliced almonds

FOR THE DRESSING

  • 3 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon hoisin sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon minced ginger
  • 1 clove garlic, minced
  • 1/4 cup vegetable oil

Make salad: in a large bowl, toss together lettuce, red cabbage, chicken, mandarin orages, crushed ramen noodles, carrots, green onions, and sliced almonds.

Make dressing: in a small bowl, whish together vinegar, honey, sesame oil, hoisin sauce, soy sauce, ginger and garlic. Slowly drizzle in vegetable oil, whisking constantly until emulsified.

Before serving, drizzle dressing over salad and toss to combine.
