NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
It was Valentine’s Day on Sunday this week and John prepared dinner for us… it was a labor of love. This year we will mark our 50th wedding anniversary… five decades of the gifting of each other.
RECIPE OF THE WEEK
John prepared roasted pears as part of our Valentine’s Day dinner… delicious!
ROASTED PEARS with balsamic and honey
- 2 large slightly under ripe pears
- 2 teaspoons unsalted butter
- 3 tablespoons good quality balsamic vinegar
- 4 teaspoons runny honey (or more to taste)
Preheat the oven to 200 degrees F.
Halve and core the pears (don’t peel them).
Melt the butter in a cast-iron skillet or other heavy-bottomed, oven-proof pan.
Add the pears, the cut side facing down, and saute them for two minutes on the stove.
Place the pan in the oven and roast the pears for 20 minutes.
Flip the pear halves and drizzle the balsamic vinegar on the pears. Continue roasting for another 5 minutes.
Remove the pan from the oven, drizzle each pear with some honey and let the pears rest for another few minutes.
Serve warm with some of the pan juices and more honey, if you wish.
