As the leaves created their annual fall color display we spent the last weekend in and out of ER and the hospital. John had a severe UTI, and even spent a night in the hospital on IV high potency antibiotics and fluids. He is feeling better but still pretty fatigued. And the leaves get more and more colorful…
RECIPE OF THE WEEK
This week’s recipe also comes from Carolyn, from our trip to SE Minnesota. It is apple season! This recipe is for those of you who don’t like a lot of cinnamon… Carolyn said she even used a little less than the recipe calls for.
JOAN’S APPLE CRISP
Cover 4 cups sliced apples (or more) with 1/2 cup water and 1 teaspoon cinnamon.
Top with crumble topping;
- 8 tablespoons butter
- 1 cup sugar
- 3/4 cup flour
Bake at 385 degrees F for 45 minutes.
For 13 x 9 glass pan:
- 8-9 cups apples
- 3/4 cup water
- 1 1/2 sticks butter
- 1 1/2 cup sugar
- 1 1/4 cup flour
