NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Our family hasn’t been gathering for Wednesday night dinners since the coronavirus hit in March. Last week our oldest granddaughter was up from Winona for a few days so we gathered outside at Staring Lake Park for Subway sandwiches and homemade chocolate chip cookies. It felt good to see each other again… the last time we were all together was the week before the March ‘stay-at-home’ order.
RECIPE OF THE WEEK
I just pulled together my favorites from what was on hand to make this ‘Favorites’ salad with homemade honey-lemon dressing, another favorite for a light summer salad.
‘FAVORITES’ SALAD with honey-lemon dressing
Honey-lemon dressing…
- 1 1/2 tablespoons lemon juice (about 1/2 lemon)
- 1/2 teaspoon minced garlic
- 1/8 teaspoon sea salt
- 2 tablespoons honey
- 1/4 cup extra virgin olive oil
- freshly ground black pepper
Salad…
- tender butter lettuce
- fresh blueberries
- cubes of extra sharp white cheddar
- walnuts
- sweet campari tomatoes, quartered
- frozen green peas, thawed but not cooked
