NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We celebrated three special events this week, and I love that the numbers were 10-15-20! Our granddaughter is now 10, grandson is 15, and our son and his wife celebrated their 20th wedding anniversary!
RECIPE OF THE WEEK
Our son’s family stayed with my cousin in New York City on their vacation this summer and when asked what their favorite meal was, both of their kids said ‘Jeff’s Pancakes’! That was our granddaughter’s request for dinner this week, and I learned that the recipe came from none other than Betty Crocker! I was told the only difference was cooking them in butter. Everyone agreed this week that they were might tasty! It’s easy to forget what a great resource that trusty red cookbook continues to be!
SINA’S FAVORITE PANCAKES
from Betty Crocker’s Cookbook
- 1 egg
- 1 cup buttermilk
- 2 tablespoons melted butter or shortening, or salad oil
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon soda
- 1/2 teaspoon salt
Beat egg; add remaining ingredients in order listed and beat with rotary beater until smooth.
Melt stick of butter on heated griddle to grease. Griddle is ready when a few drops of water bubble up and skitter around.
